Is the rear diff breather the only one I need to concern my self with, especially w/out a snorkel?

yes, the front diff breather is pretty high up, but what kind of water crossings are you planning on going through that makes you think you need a snorkel?

I don't plan on getting a snorkel, but since I'm going to extend the rear diff breather, I was just wondering if there were others that could be as easily extended.

I keep all my breathers as high as the intake. Front,Rear, and Auto Tranny. If you plan on doing the plunge then think about ECU, snorkel, plug wires and any other wires. Oh yeah, dont stop or you may have to worry about your exhaust.

Where is the auto-tranny breather and what's needed to extend it? I've done the rear, still need to extend the front higher than it is... and have not found the tranny/transfer case breathers yet.

The 3rd gens already have a front diff and t-case breather in the engine bay.
You can extend them but there pretty hih as is, when looking at the engine from the front look to the left on the wheel well below the charcoal canister, and you will see them.

You don't need to extend them past your intake, once water is that high your sunk.

Unless of course you have a snorkel.
But yeah you don't need to cause your screwed once the water is that high.

Here is the best/easiest breather fix out there. This is what the pro's (rockcrawlers) have been doing for years.

you know, thats not much more expensive than running lines up the body, might have to give that one a try.

By the look of mine, I wonder if gear oil is coming out 24/7?
Its darker and dirtier then the rest of the engine bay lol!
