I'm in the middle of installing a 1" diff drop. I've got the 2 big bolts loosened as seen in the instructions....are there any other bolts that need to come off? For some reason the diff isn't dropping after loosening the 2 big bolts and the bolts won't come out, they just keep on spinning.

you might have some corrosion holding it all together. i would tap the front of each mount with a mallet to knock it loose. no other bolts have to be loosened.
you should be able to pull those bolts out though. just try harder :D

You need to put a wrench on the other side to prevent the bolt from spinning...

Have a couple different jacks handy to help line everything up.
The first time i tried to put mine in i got frustrated and gave up.
The second time i fussed and cursed till it went together.
I want to say i just played around with he angles till i got one to line up than i threaded the nut on a few turns and fussed with the other side.
Have fun and good luck.
