With a decent collection of cooks and a lot of Californians, I was curious if anyone had a preferred fish taco recipe. There is a place in town that makes excellent ones, but I am trying to cook more in house and eat out less.

I have good access to the parts, just trying to get the right series of things to go together.

Thanks.

cabbage and green pablano sauce, fried hallibut or cod, whichever of your choice. Good Eats :D

I hate fish and detest cabbage but this I like. The kids love it. Takes forever to make the salsa (I use mango).

Fish Tacos from Better Homes and Gardens

1 pound fresh of frozen skinless cod, orange roughy, or other fish fillets
2 tbsp butter or margarine, melted
1/4 tsp ground cumin
1/8 tsp garlic powder
3 tbsp mayonnaise
1 tsp lime juice
1 1/2 cups packaged shredded cabbage with carrot (coleslaw mix) or shredded cabbage
8 taco shells, warmed
1 mango salsa (below)

1) Thaw fish, if frozen. Rinse fish and pat dry with paper towels. Cut fish crosswise into 3/4" slices. Place fish in single layer in greased shallow baking pan. Combine butter, cumin, and garlic powder. Brush over fish. Bake in a 450 degree oven for 4-6 minutes or until fish flakes easily when tested with a fork.

2) Meanwhile, in a medium bowl stir together mayonnaise and lime juice. Add cabbage; toss to coat. Sponn some of the coleslaw mixture into each taco shell; add fish slices. Top with Mango Salsa

Mango salsa
In a medium bowl combine 1 1/2 cups chopped, peeled mangoes or peaches; 1 medium red sweet pepper, seeded and finely chopped; 1/4 cup thinly sliced green onions; 1 jalapeno chile pepper, seeded and finely chopped; 1 tablespoon olive oil; 1/2 teaspoon finely shredded lime peel; 1 tablespoon lime juice; 1 tablespoon vinegar; 1/4 teaspoon salt; and 1/4 teaspoon black pepper. Makes 2 cups.

Right on every body! I appreciate it.

I like a little guacamole and sour cream with mine, not sure how great these are for a person but I absolutely love the taste combination.

I will work on this during the week and get back to y'all.

adrian,

personally, I like grilled fish, not fried, so if you want to keep it reasonably healthy, grill it. my favorite fish for FTs is albacore which is more native to mexico than, say, cod. but cod is good b/c its readily available, chunky, and flaky white fish. if you grill, choose albacore but brush with olive oil and your choice of spices (salt and pepper w/ a squeeze of lime at the end is just fine). but if you fry, cod is a good choice but a little to...ahemm...gringo for authentic FTs imho!

- thinly sliced cabbage

- sauce. personally i like pico de gallo. chop some japapeno, diced tomatoes, orange juice from a real orange (preferable), white onions and cilantro. if you have it in your neck of the woods, get some "crema", which is what it sounds like.

Hab, finely chop the cabbage and use sparingly, the smaller the slices, the easier to digest, and also, the lime/lemon cuts the taste and actually if you want, sprinkle the cabbage so it'll cook a little bit, sort of like ceviche. Let it sit soaking for a while, or you can always steam it with a little sea salt in the water.
Thanks! I actually like it (and the only way I like it) with the fish taco recipe, though, just like it is.
Cooked leafy veggies, yech!
