    Marin's Trifecta Chili

    As some of you tasted, here is the recipe for Marin's chili.

    Texas Chili

    1 Tbsp. oil
    2 onions, chopped
    3 Tbsp. garlic, chopped
    3 Tbsp. chili powder
    2 Tbsp. paprika
    1 Tbsp. cumin
    2 tsp. dried oregano
    1 lb. ground beef or turkey
    1 lb. italian sausage, crumbled
    2 tsp. salt
    2 28 ou. cans crushed tomatoes with puree
    1 15 ou. can kidney beans, rinsed and drained
    1 15 ou. can barbecued baked beans (with BACON), drained
    1 Tbsp. minced canned chiptle chiles in adobe sauce

    Heat oil in a large pot over med. heat. Add onions and garlic and cook, stirring occasionally, until tender (7-10 min.). Add chili powder, paprika, cumin, and oregano and stir until spices are well combined. Add ground meat, sausage, and 1 tsp. of the salt. Increase heat to med-high and cook meat, stirring frequently, until cooked through (8-10 min.). Stir in remaining ingredients. Reduce heat to low, cover, and simmer, stirring occasionally, for 1 hour. Adjust the seasonings with more salt or chiles if necessary.

    Of course you may spice to your needs. The last batch she made was not spicy as the store was out of adobe chilis. I tend to like spicy chili with a bunch of onions and cheese on top.
