Just made our own cheaper, lower calorie version of Carne en su Jugo. Bacon cooked, fry some chicken breasts w/ salt and pepper to taste in it. Drain remaining bacon grease, chop up the chicken and bacon into fingertip sized pieces, pour 1 bottle (or 2-3 of those small cans) of chile verde in with 1-2 cups of water and some precooked pinto beans and bring to a boil. Once boil is reached turn down to low for about 30-45 minutes..you can go longer and get better flavor, but an hour on simmer tops if you want to recook the extra another day and not have the chicken pieces completely fall apart, top with onions and lemon juice and add some tortilla chips on the side for good measure. You can also substitute in some celery in the boiling process for added texture.

In this case we bought a bag of frozen chicken breast pieces at Cosco like we usually do once a month for quick and easy dinners and picked up the rest at the local stores Hispanic Food aisle. We're going to try prefreezing some and using it for one of our upcoming "First Night" dinners.
